Corned Beef with Fried Rice and Egg

This Corned Beef with Fried Rice and Egg dish is one of our favourite quick recipes for any meal – breakfast, lunch or dinner!

Serving Size: 2

Ingredients:

  • 1 can Palm Corned Beef
  • 1/2 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp. vegetable oil
  • salt to taste
  • 2 eggs

For Fried Rice:

  • 2 cups cooked rice
  • 2cloves garlic minced
  • 1 tbsp. vegetable oil
  • 1/2 cup frozen peas

Directions:

  1. Corned beef: Heat 1 tbsp oil in a pan over medium heat. Sauté onion for 2 minutes until soft, add garlic and cook for 2 more minutes. Add corned beef and cook until heated through and flavours combined, about 5 minutes. Add salt to taste
  2. Fried rice: Heat 1 tbsp oil in a pan over medium heat. Fry garlic until soft, about 2 minutes. Add the rice and peas, heat and stir until cooked about 5 minutes. Add salt to taste.
  3. Eggs: Heat 1 tbsp oil in frypan. Cook two eggs sunny side up.
  4. Serve corned beef with fried rice and egg while warm, garnish with tomatoes if desired.
