Easy Tuna Patties April 25, 2021 By Jean Crispy and delicious easy tuna patties – they’re quick to prepare and economical too. Great dipped in ketchup or hot sauce, or even served as a tuna burger!Serves 4Prep time: 10 minutes, Cook time 20 minutesIngredients:2 cans Bolinao’s Best Tuna, drained1 egg2 tbsp lemon juice1/2 cup bread crumbs2 tsp Dijon mustard2 tbsp chopped fresh parsley or cilantro2 tbsp chopped green onions, or finely diced shallotSalt and black pepper to taste2 tbsp olive oil1 tbsp butterDirections:Beat egg and lemon juice in a large bowl. Add bread crumbs and mustard and stir well.Stir in tuna, herbs, onion, salt and pepper until well-mixed, but tuna still has some chunks. Shape mixture into eight 1-inch-thick patties.Heat oil in a skillet over medium heat, add butter and begin frying patties until golden brown, about 5 minutes per side. Cook in two batches if needed to not crowd the pan.Serve easy tuna patties when hot and crispy, with lemon, ketchup and/or hot sauce. Enjoy!
