Pork Adobo

Tender pork simmered in a rich, tangy sauce made with dark soy sauce, vinegar and garlic. Pork Adobo is so delicious – make our new recipe yourself!

Prep Time 15 minutes, Cook Time 60 minutes
Serves 4

Ingredients:
– 2lbs pork shoulder or belly, cut into bite sized pieces
– 2 tbsp vegetable oil
– 1 small onion, sliced thinly
– 3 garlic cloves, sliced thinly
– 1/3 cup Coconut Brand soy sauce
– 1/2 cup white vinegar
– 1 cup water
– 2 bay leaves
– 1/2 tsp ground black pepper or whole peppercorns
– 1 tsp brown sugar


Directions:
1. Heat oil in a heavy saucepan over medium heat. Add pork pieces and brown on all sides.
2. Add sliced onion, sauté with pork for 2 minutes stirring frequently. Add garlic and sauté for a further minute.
3. Add the rest of the ingredients to the pot, stir well and bring to a boil.
4. Cover the pot, turn heat down to low. Check and stir often, adding more water if sauce becomes too dry. Simmer for 45 to 60 minutes until meat is very tender. Serve with rice.
