Pork Banh Mi Sandwich

A delicious Pork Banh Mi Sandwich you can make at home! With tender marinated pork slices, creamy liver spread and tangy pickles.

Prep Time 90 minutes, Cook Time 15 minutes
Serves 4

Ingredients:
(For pork and marinade)
– 1 lb pork tenderloin, thinly sliced
– 1 tbsp honey
– 2 tbsp fish sauce
– 2 tbsp soy sauce
– 2 garlic cloves, minced
– 1 tsp sesame oil
– 1/2 tsp black pepper

(For pickles)
– 1 large carrot, peeled and cut in matchsticks
– 1 cup daikon radish or other radish, thinly sliced
– 1 large jalapeno pepper, seeds removed, thinly sliced
– 1/2 cup water
– 1/2 cup apple cider vinegar
– 1 tsp salt
– 1 tbsp sugar

(to assemble)
– 2 tbsp vegetable oil
– 4 crunchy french baguette rolls, sliced lengthwise
– 1/2 cup Palm Liver Spread
– 4 tbsp mayonaise
– 1 cup fresh cilantro

Directions:
1. Combine marinade ingredients in a bowl. Add sliced pork. Cover and marinate in refrigerator for 1 hour or longer.
2. Combine pickle ingredients in a bowl, stir vegetables and keep covered in refrigerator for 1 hour or longer.
3. Heat vegetable oil in a cast iron pan or wok over medium heat. Remove pork from marinade, add to hot pan. Sear pork, 1 or 2 minutes each side. Remove to a plate.
3. Assemble sandwiches. Spread one side of each baguette with liver spread, the other with mayonaise. Top with pork, pickles and cilantro. Enjoy!
