Just out here, asking the tough questions.Note: Serves 2 to 4 peopleIngredients:2 cans Bolinao’s Best Tuna, drained1/4 cup mayonnaise¼ cup finely chopped red onion1 tablespoon fresh lemon juice¼ teaspoon coarse salt¼ teaspoon ground pepper¼ teaspoon dried oregano4 slices crusty bread8 thin slices tomato½ cup grated cheesePreparation:Heat broiler, with rack in the highest position, in a medium bowl, combined tuna, mayonnaise, onion, capers, lemon juice, salt, pepper, and oregano and stir until thoroughly combined. Arrange bread on a baking sheet and spread a little mayonnaise on each slice. Divide tuna salad evenly among slices, then top each with 2 sliced tomato and grated cheese. Broil until cheese is golden brown and bubbling. 3 to 4 minutes.
