Ube Ice Cream Cookie Sandwiches

We are in love with these ube ice cream cookie sandwiches! Make these frozen treats at home yourself – so easy to make and delicious.

~Ube Ice Cream Cookie Sandwiches~
Prep time 5 mins, Freezer time 30 mins
Serves 6

Ingredients:

• Pulo Cuisine Ube or Ube Macapuno Ice Cream
• 12 large, soft cookies

Directions

1. Top one cookie with as much ice cream as you can fit – about 1 cup per sandwich. Top with a second cookie, and compress gently to flatten sandwich slightly.

2. Repeat with remaining cookies, to make 6 sandwiches.

3. Freeze ice cream sandwiches for a minimum of 30 minutes. Enjoy!
