Coconut Milk Pancakes

Top coconut milk pancakes with maple syrup, toasted coconut, whipped cream or fruit for a wonderful breakfast treat!

Serves 4
Prep time 10 minutes, cook time 15 minutes

1 ¼ cups all-purpose flour
1 tbsp white sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 (14 ounce) can Davao’s Favorite Coconut Milk
1 egg
1 tbsp melted butter

1. Combine flour, sugar, baking powder, baking soda, and salt together in a bowl.
2. Whisk coconut milk, egg and butter together in a separate bowl. Stir into the flour mixture until just combined.
3. Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook coconut milk pancakes until browned on the other side, 1 to 2 minutes.
4. Repeat with remaining batter. Enjoy!
