Quick and easy spicy noodles

These spicy noodles take just 15 minutes to make! Lucky Me instant noodles come with the most flavourful, spicy sauce. So just add your own vegetables and an egg – and you’ve got a quick and budget-friendly dish!

Prep/Cook Time 15 minutes

Serves 1 or 2

Ingredients:
– 2 packets Lucky Me Pancit Canton Hot Chili Noodles
– 1 tsp vegetable oil
– 1 cup finely sliced vegetables of your choice (we used mushrooms, carrots and cabbage)
– 1 or 2 eggs
– 2 green onions, finely chopped
– 2 tsp cilantro or other fresh herbs

Directions:
1. Bring two pots of water to a boil. A small one for the egg, and a larger pot for the noodles.
2. For a soft boiled egg with a runny yoke, add egg to boiling water for 7 minutes. Remove from pan and submerge egg in cold water.
3. Cook instant noodles in boiling water per package instructions. Drain well.
4. Heat oil in a frypan over medium heat. Add vegetables and fry lightly for a few minutes while stirring. Remove frypan from the heat. Add cooked noodles.
5. To a small bowl, add contents of the seasoning, oil and soy sauce packets from the Lucky Me instant noodles. Stir well. Add sauce to the frypan and mix well to cover the noodles and vegetables.
6. To serve, top noodles and vegetables with sliced green onion and herbs of your choice. Peel and slice egg in half and add to the top. Enjoy!
